At rest, it has an alkaline reaction; but under the influence of fatigue, as well as under the influence of repeated excitations, this reaction becomes acidic, due to the formation of sarcolactic acid. It contains about 74 to 78 p. 100 percent water and a large number of substances, which can be classified into the three main classes :
